As far as I’m concerned, these aren’t really cookies, they’re miniature pies. They look better than hand pies, though; there’s a lattice-top, allowing the filling to ooze out onto the pastry, caramelizing and crisping the edges at the same time. So, Apple Pie Cookies may not be cookies, in the traditional sense, but they look divine! I will certainly be saving the recipe and giving them a bash one weekend — but I’ll be making mine with peaches!
